Greek Salad Bites

Individually made appetizers are things I generally tend to shy away from.  I love making dips and simple fair for parties and gatherings.  Years ago I came across the recipe for Greek Salad Bites on the Cooking Light BB and my attitude towards appetizers changed a bit.  Everyone in the CL community raved about this recipe, originally posted by jilliniowa, and I had to try it.  Truly tasting like a Greek salad, this appetizer has been gobbled up time and time again.  My family and I were back in Chicago celebrating Christmas with my parents David and Teresa.  Our wonderful friends and neighbors the Haley's invited us over for a holiday party on the 23rd and I knew this recipe would be the one to select and share.  It was an absolute hit.  I received numerous compliments and was asked for the recipe.  Kylie, my stepdaughter ate about half of them herself, so I know what to make her next time she and her girlfriends are over and need something to much on.  Greek Salad Bites are easy to make, enjoyed by everyone, and highly recommend.

Greek Salad Bites
Better Homes and Gardens, Quick and Easy Comfort Cooking

Ingredients
1 cup crumbled feta (4 ounces)
1/2 cup sour cream
1/4 cup chopped parsley
2 Tbs. oil-packed sun-dried tomatoes, drained and finely chopped
2 cloves minced garlic
1/2 tsp. cracked black pepper
1 1/2 medium cucumbers
1/4 cup finely shredded fresh basil
1/4 cup chopped Kalamata olives

Instructions
1. In a small bowl stir together the cheese, sour cream, parsley, tomatoes, garlic, and pepper. Cover and chill for at least two hours.

2. Bias-slice cucumbers into 1/4 inch slices. Spoon 1 1/2 tsp. cheese mixture onto each cucumber slice. Arrange on serving platter.

3. In a small bowl, stir together basil and olives. Spoon some of the mixture over each cucumber slice. Serve immediately.
